Belgian Chocolate Brigadeiro Recipe
Brazilian Brigadeiro recipe, in my version made with Belgian chocolate.

It’s hard to believe that with so few ingredients it’s possible to create something so delicious, but the fact is that Brigadeiro is a must-have on the menu of any birthday party in Brazil. My more refined version uses dark Belgian chocolate, making it less sweet and very appealing to European palates. That’s why I’m posting this in English.
Origin of the name: the name “brigadeiro” pays homage to Brazilian military officer Eduardo Gomes, who held the rank of Air Force brigadier. He ran for president of Brazil in 1945. During the campaign, voters and volunteers created and sold this treat made with sweet condensed milk and chocolate to raise funds for the candidate. Although he didn’t win the election, the treat was a huge hit and the name stuck. In southern Brazil, we call it “negrinho.”
Using condensed milk as a base, we’ve created many variations, which I plan to share here little by little. Here’s my recipe, which stays good and tender for at least two weeks (in a closed box or tupperware)!
Belgian Chocolate Brigadeiro Recipe
Ingredients
- 200 g dark Belgian chocolate;
- 400 ml sweet condensed milk;
- 1/2 tablespoon butter;
- 200 ml heavy cream;
- 200 g chocolate sprinkles;
- Small paper cupcake liners.

Instructions
Mix all the ingredients in a saucepan over medium heat using a spatula, stirring in the same direction the entire time. When it starts to bubble, cook for 5 minutes, stirring constantly (or until it pulls away from the bottom of the pan easily).




You can see the ideal consistency in the video. Once it reaches the right consistency, transfer it to a serving dish lightly greased with butter, cover with plastic wrap, and let it cool in the refrigerator.
When it’s completely firm, roll it into small balls with your hands (each weighing approximately 18 g, depending on the size of the paper cups you have). Roll the balls in chocolate sprinkles, place them in the cups, and they’re ready to serve!
